Why I love my breakfast on the Weekends
I have to say I love my breakfast on the weekends. Why? Because my husband cooks breakfast for me every weekend. Yes you heard that right. We get up together and enjoy a cup of coffee as we talk about what he should create and what the day will bring. I might take a few minutes to play a game of words with friends on the phone and he might take 10 minutes to scroll through boats on his phone (yes we do those things too). It’s not a perfect world.
On the weekends he is officially the breakfast cook and I am his sues chef and help with the chopping and preparing so he can cook. Now that doesn’t mean we will be eating a high fat carbohydrate laden meal. In fact we pride ourselves on making the breakfast fun, tasty, and healthy. We don’t always agree 100% so that’s where the compromise comes in. Sometimes it’s him and other times it’s me. We have tried many recipes. Some turn out great and some, well not so great. We have done omelets, frittatas, pancakes, breakfast bakes and the list goes on. We like to experiment.
One of the things my husband has perfected is his Blueberry Protein Pancakes. I was never a big fan of the pancake and still to this day it is not something I would ever order at a restaurant. But I have to say when he makes these I am very willing to taste test them for him. They are light, tasty and packed full of protein.
Every year we attend the Blueberry Festival in Grand Haven Michigan (they have everything blueberries, from ice cream to popcorn to pancakes). We usually bring around 50 lbs. of blueberries home with us and use them throughout the year. They are great alone right out of the freezer and they are by far the juiciest, plumpest berries you will ever find. Thus our recipe for the healthy blueberry pancake.
Here is what’s included:
Blueberry Protein Pancakes
1/3 cup of Oats
1/3 cup of Granola
½ cup of Coconut Milk
½ cup of Fage Greek Yogurt
1 tsp. of Vanilla
1/3 cup of Coconut Flour
1/3 cup of Vanilla Protein Powder
½ tsp. of Cinnamon
½ tsp. of Baking Powder
½ tsp. of Baking Soda
Blend the first 6 ingredients in a food processor until well blended.
Whisk in the flour, protein powder, spices and the rest.
Cook like you would a regular pancake.
Drop Blueberries on top of your pancakes as they cook. We use frozen Michigan Blueberries but you can use whatever you have on hand. We also sprinkle a little granola on the top to add a little texture.
I top with yogurt and fresh fruit. You can use whatever you like. We also use Sugar free blueberry syrup sometimes.
